Salmon fritters

220g can pink salmon - do not drain off juice
1 tblsp chopped parsley
1 medium carrot, grated
2 eggs
1 small onion, finely chopped
4 tablespoons self raising flour
2 cups grated potato

In a bowl, mix together salmon and juice, parsley and onion,  Break up salmon with a fork.  Add eggs and mix through. Sir in SR flour, then grated carrot and lastly grated potato.

Heat some canola oil in a pan ( about 1/4 cup).  When oil is hot put large tablespoons of the mixture into the pan.  Turn over when browned and cook other side.  When ready drain on absorbent paper.

The mixture needs to be cooked fairly quickly after preparation as the potato will discolour.

Makes about 16 fritters.  Serve with a salad of choice.

Lamb Meatballs

1 kg minced lamb (or beef if you prefer)
1 large onion, chopped
1 egg
1/2 cup breadcrumbs
1 can low salt condensed tomato soup 450gm
1 can diced tomatoes 825 gms
1/2 cup chopped basil
2 tblsps worcestershire sauce
2 tblsps soy sauce (salt reduced if you want to be good)

Combine lamb, onion, egg and greadcrumbs.  Roll into ball the size of a golf ball.  Put them on a tray and bake for about 40 minutes on 180 degrees.  Put meatballs into a casserole dish.
Now we can make the sauce.  Combine soup, tomatoes, basil, worcestershire sauce and soy sauce in a saucepan.  Stir until just boiling.  Pour this sauce over the meatballs and cover.  Bake in a moderate oven stirring occasionally, for about an hour.
Yummy with mashed potatoes or noodles,  and peas.

Moroccan eggplant

I am always looking for different ways to use up all the eggplant that we grow in our garden.  In my household this has been voted as one of the easiest and tastiest recipes I have tried this summer.

Combine 1/3 cup moroccan seasoning with 1/2 cup plain flour and 1/2 cup breadcrumbs (packaged breadcrumbs are fine) in a bowl.  In another bowl beat 2 eggs.

Slice eggplant into 1cm slices. Dip eggplant into egg mix then crumb mix.

Heat some olive oil in a pan on medium heat and fry eggplant in batches for 2-3 minutes or until golden. Drain on paper and keep warm in the oven until all are cooked.When ready to eat squeeze over some lemon juice and sprinkle with coriander if you like.

My chicken tray dinner

Turn oven to 190 degrees.  In a baking tray place 8 chicken pieces (legs, thighs - whatever you like) 12 small potatoes, 2 red onions, peeled and quartered, 8 cloves garlic, peeled, 6 carrots halved lengthways or 12 small. Sprinkle over some olive oil, say 1/4 cup, some rosemary (dried or fresh) some tarragon (dried or fresh) 1/3 cup white wine, a dash of balsamic vinegar, and salt and pepper.  Mix around.  Place in oven uncovered for about an hr.  Give a stir every 15 minutes or so. That's it.  Serve it with something green and there's dinner for 4 people. Naturally after opening the wine it must be finished.  Enjoy!!
